1 cup (250 ml.) ricotta or drained cottage cheese
1/3 cup organic butter, melted (40 ml.)
4 eggs, separated
½ cup arrowroot powder
1 tsp spoonable stevia
2 tsp. grated lemon peel
Fresh berries


In a medium bowl, blend cheese, butter and egg yolks. In a small bowl, blend arrowroot, stevia and lemon peel. Stir dry ingredients into cheese mixture. Beat egg whites until soft peaks form. Fold egg whites completely into batter. Drop by ¼ cup onto hot griddle. Cook turning once, about 4 min. over med. heat. Serve topped with blueberries and organic whipping cream.
